Grilled Barbecue Skewers with Vegetables and Beef

Ingredients (Serves 4):
1 lb (450g) beef sirloin, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 zucchini, sliced into thick rounds
1 red onion, cut into wedges
8-10 button mushrooms
4 tbsp Foxx Flavours Spicy Gold Rush sauce
2 tbsp olive oil
1 tbsp soy sauce
1 tsp garlic powder
1 tsp smoked paprika
Salt and pepper to taste
Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)

Prepare the Marinade:
In a large mixing bowl, combine Foxx Flavours Spicy Gold Rush sauce, olive oil, soy sauce, garlic powder, smoked paprika, salt, and pepper. Mix well.
Marinate the Beef:
Add the beef cubes to the marinade. Toss well to ensure the beef is fully coated. Cover the bowl and let the beef marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.
Prepare the Vegetables:
While the beef marinates, prepare the vegetables. Toss the bell peppers, zucchini, red onion, and mushrooms with a drizzle of olive oil, a pinch of salt, and pepper.
Assemble the Skewers:
Thread the marinated beef and vegetables onto the skewers, alternating between beef and veggies for a colorful and balanced skewer.
Preheat the Grill:
Heat your grill to medium-high heat. Lightly oil the grates to prevent sticking.
Grill the Skewers:
Place the skewers on the grill. Cook for 10-12 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are slightly charred and tender.
Brush with Extra Sauce:
In the final 2 minutes of grilling, brush the skewers with additional Foxx Flavours Spicy Gold Rush sauce for an extra kick of flavor.
Serve and Enjoy:
Remove the skewers from the grill and let them rest for a couple of minutes. Serve hot with your favorite sides like rice, salad, or crusty bread.
